A very easy salsa that we use as a side to add flavour to simple dishes. It only takes a couple of minutes to prepare and will make boring dishes pop.
2 Ripe Tomatoes 1/2 Red Onion 3 Tbsp of White Wine Vinegar or White Vinegar (To Taste) Juice of 1/2 Lime (Optional) Chopped Coriander (Optional) Salt & Pepper (To Taste)
Finely dice onion and place in a bowl Add vinegar & lime juice Finely dice tomato and add to bowl Leave for 5min to let acids "cook" onion (Time permitting) Stir ingredients together and season with salt & pepper
